Hotel Macdonald in Edmonton Alberta! Vegan Heaven!


I just wanted to take a minute and share my favorite place to eat, the Hotel Macdonald here in Edmonton AB.

Let me start off by saying this hotel is amazing, it is beautiful beyond words and they cater to vegetarians and vegans! The food they serve is amazing and they take the time to ensure every detail of the meal is perfection.

They have a brand new vegan menu to choose from but if you want something else, let them know and they are more than happy to make it for you! They have made my husband and I amazing 7 course meals for special occasions, delicous breakfasts and casual lunchs.

If you are ever in Edmonton visiting, stay at the hotel or stop by to enjoy the amazing cuisine!

French Toast!

This past weekend I wanted to try a breakfast I use to love, french roast. I saw a book called Vegan Yum Yum and found a great recipe for just that! I would highly suggest everyone who wants amazingly quick, pretty and yummy vegan food to get this book, it's excellent!

my husband was SO happy when he woke up to the smell of the french toast! I added some berries and maple syrup and let's just say they didn't last long!

Chocolate Chip Scones!

Oh my goodness! Things have been so crazy here! I unfortunately severely sprained my ankle and have not been able to stand around and bake in the kitchen. Hubby has been taking great care of me but I was getting antzy so I thought scones would cheer me up!

These tasty ones are from "The Joy of Vegan Baking" and are pretty simple to make. I love them alone or with a little fresh Jam! They are not exactly "fat free" but hey, I deserve a little treat after my ankle injury! LOL!

I will be posting more now that I am mobile so keep an eye out for some yummy new treats (and disasters no doubt..lol!)!

Eggs Bennie! (vegan, of course :-))

So for Christmas I got the book "1000 Vegan Recipes" and I was looking throughit for a nice sunday breakfast for hubby and I. I came across this one and wanted to try it since I use to LOVE Eggs Bennie! I know it's not exactly baking but it was soo good I just wanted to share!

We tried a few recipes from this book and they have all came out very nice! I would say pick the book up and give it a whirl!

Festive Sugar Cookies!



I love sugar cookies and think fondly of getting them with a cup of hot chocolate around the holidays. This is my first attempt at making them and let's just say it was an experience..LOL!

At one point during my evening of baking and icing these little cookies (96 in total!) I was sat on the floor, covered in flour in my "Kiss me I'm Vegan"apron, with colored icing on my hands wondering why I started this in the first place! LOL!


The good news is when I finished them I ADORED them! We had plenty to send to my work, as well as my hubby's, and they also thought the little cookies were delicious!


When I got home this evening I even made a few more with toasted coconut!

Chocolate Cupcakes with Vanilla Coffee Frosting

So this weekend I was thinking about these cupcakes I use to get when I was not vegan. They had vanilla coffee frosting and were so amazingly yummy so I thought I would try my hand at making them in a "vegan friendly"way!

I my base cupcake was from "Vegan Cupcakes Take Over The World" and then I did some personalizing. The frosting was simple but as I don't own a hand mixer my arms are a bit sore from all the whisking...LOL!

The end result was a moist, flavorful, delicious cupcake! I think I may like this one more than the one I remember from so long ago!

So next time you are craving one of those non vegan goodies, try your hand at making it! You may just surprise yourself!
