So for Christmas I got the book "1000 Vegan Recipes" and I was looking throughit for a nice sunday breakfast for hubby and I. I came across this one and wanted to try it since I use to LOVE Eggs Bennie! I know it's not exactly baking but it was soo good I just wanted to share! We tried a few recipes from this book and they have all came out very nice! I would say pick the book up and give it a whirl!
