Festive Sugar Cookies!



I love sugar cookies and think fondly of getting them with a cup of hot chocolate around the holidays. This is my first attempt at making them and let's just say it was an experience..LOL!

At one point during my evening of baking and icing these little cookies (96 in total!) I was sat on the floor, covered in flour in my "Kiss me I'm Vegan"apron, with colored icing on my hands wondering why I started this in the first place! LOL!


The good news is when I finished them I ADORED them! We had plenty to send to my work, as well as my hubby's, and they also thought the little cookies were delicious!


When I got home this evening I even made a few more with toasted coconut!

Chocolate Cupcakes with Vanilla Coffee Frosting

So this weekend I was thinking about these cupcakes I use to get when I was not vegan. They had vanilla coffee frosting and were so amazingly yummy so I thought I would try my hand at making them in a "vegan friendly"way!

I my base cupcake was from "Vegan Cupcakes Take Over The World" and then I did some personalizing. The frosting was simple but as I don't own a hand mixer my arms are a bit sore from all the whisking...LOL!

The end result was a moist, flavorful, delicious cupcake! I think I may like this one more than the one I remember from so long ago!

So next time you are craving one of those non vegan goodies, try your hand at making it! You may just surprise yourself!

Toasted Coconut & Chocolate Cookies

So last evening my husband wanted to watch the movie "Predators" so I thought this was the best time to try a new cookie.

Hubby loves coconut so I tried this cookie from '"Vegan cookies invade your cookie jar". The came out great! Not only did my hubby love them but so did both our workplaces! For a simple recipe it came out very lovely and full flavored!

I really recommend this baking book to anyone who loves to make cookies and want some easier recipes that still look great!

Deluxe Chocolate Brownies

So my husband has a soft spot for brownies, and not just any brownie but a fudgy, rich, moist brownie! In the book "The Joy of Vegan Baking" there is an excellent receipe for this.

These brownies are simple to make and taste amazing! They have applesauce in them to lower the sugar content and it makes them all the more moist. I also add a half a cup of chocolate chips to them for bursts of warm chocolate yumminess!


Needless to say these brownies are now all gone and my husband is quite full. I love them too, much to the detriment of my workout routine, but what's the point of working out without being able to have a few goodies now and then?

Shortbread Cookies with Chocolate Drops

This weekend I wanted to try a new receipe so I thought I would try one from "Vegan Cookies Take Over The World". They are the Shortbread Fudgies and they are a piped cookie.



I had never tried piping before and let's just say I am not expert! It was actually a fun receipe and I enjoyed piping the cookies and then adding the chocolate drops in the middle.




My husband LOVED them, and I adored them as well. I added some almond extract and it just added a bit more of a pop in the flavor.



So try something new and try a piped cookie! I know I will be making these again soon!

Chocolate Peanut Butter Cups!

I love chocolate and peanut butter together so much, it's just one of those things that I could eat until the end of time.

"The Kind Diet" cookbook has a great recipe for this and I simply made a few modifications. I changed the graham crackers to oreo cookie crumbs because I love the extra chocolatey flavor.

I brought these goodies into work and they went quick! I got "THESE are vegan?!?!" a lot which always makes me smile. I love showing people vegan goodies can be amazing, not just ok.

I will be keeping these in my aresenal of sweet treats to feed the doubters! Ha!

I'm Back!

So I got lost out in real life for the last while and am so glad to get back into baking and blogging! I am doing some baking this weekend so expect a few more posts !


I thought I would share a shot of my birthday cake. It is a 2 layered- double chocolate cake with raspbery mousse. It has toasted pumpkin seeds on the outside and a choclate glaze to die for!


I didn't make this cake, it was made for me on my birthday but it was THEE most amazing cake.

Apple Pecan Muffins

These muffins are rustic and so friggin tasty! They are also from The Joy of Vegan Baking recipe book and let me tell you, I was hesitant while making these since the batter is more doughish than I am use to. I was so glad when they finished baking that they were excellent!

They may be ugly but they are yummy! Try them!

Peanutbutter Cookies

So when I was a kid my mom use to make peanut butter cookies with me and I always loved them. This recipe is from The Joy of Vegan Baking book and is just delicious!

Hubby always use to tell me how horrible peanut butter was and yet... for some reason.... he can't stop eating these little gems! Ha!

Is anything more comforting than a warm peanut butter cookie and a glass of soymilk?! I think not!

Amazing Blueberry Muffins!

So today while my husband was making dinner, I decided I would try out my revised version of the blueberry lemon muffin recipe from the Joy of Vegan Baking. I took a few ideas from the American Test Kitchen that we saw the day before.



The first alteration was taking 1/2 cup of the blueberries( 1- 1/2 cups are needed) and warming them in a pot with some sugar to get some of the juice out and to concentrate the flavor, it turns out like a jam. When that was done I added a tsp to the center of each muffin and swirled it with a chop stick. This adds a great flavor and the difference is amazing! The other cup of blueberries gets added in as normal so you still have some whole berries in the muffin.



The second alteration is taking a 1/2 cup of sugar and add about 1 table spoon of lemon zest to it. I also added some raw sugar to the mix for a nice golden color. I mixed this together and sprinkled on top of each muffin before baking. It makes a great crisp top and nice flavor!

I wasn't sure how this would turn out but it was actually pretty remarkable! I loved them and of course my husband was wolfing them down..LOL!


Try this idea out on your next fruit muffins! I know I will be doing this for my strawberry ones :)

Chef Chloe Beach Bars!

I was sent a link last week to an amazing young vegan chef named Chloe. She has some incredible talent and I thought I would try out one of her recipes called Beach Bars.

It is a quick and simple reciepe that tastes great! I used chocolate graham crackers as the base for mine since I am a choco-fiend. They taste great and are husband approved!

Keep an eye on this amazing woman, I know I will be trying out more of her amazing recipes!

Fruit Crumble

Last night I was really in the mood for something warm and sweet so I went looking in The Joy of Vegan Baking book and found the banana crumble recipe and thought it would be perfect! I added some additional fruit (blueberries and stawberries) and I have to say this is one of the easiest recipes I have made! it took less than 15 minutes to get together and it bakes in 20 minutes.


my husband was more than willing to try it out when it was done and he ADORED it! He said it was one of the best things I had made.


I love these simple recipes that are quick and amazingly tasty in the morning. Try a crumble!

Vegan Quiche


My husband made the transition from being a "meat-eater" to vegetarian years ago but has always maintained that he loves quiche. This of course only makes me want to find the world's BEST vegan quiche recipe and make him love it! Bawahahahah!!

So I went off to see if I could find a recipe that could hold up to my husband's expectations of what a quiche should be and what it should taste like.

After checking out a few recipes from the web, I settled on modifying one from Fat Free Vegan Kitchen. It was orginally crustless and my since my husband's quiche had a crust, I was going to have one as well! It was also originally done as "mini's" but I wanted a full on pie size.

It was actually surprisingly easy to make, as are most of the Fat Free Vegan Kitchen's Recipes, and I waited patiently for my husband to arrive home. Oh boy was he going to be surprised.. or else...
Much to my delight he LOVED it. I don't mean the " Aww, my wife cooked so I must love it" kind of love, but the "OMG I REMEMBER WHY I MARRIED THIS WOMAN!" love!

As I mentioned I did modify the ingredients, added a crust and made it full size but the base is the same so try it out!

Summer Time Fruit Tarts & The Definition Of Mornings

Me and my husband differ greatly in our ideas of when "morning" starts. He is under the impression that ,on the weekends, mornings are optional and if one so chooses they can be skip all together. I, on the other hand, am of the impression that as soon as that sun comes up, so must I. There has been many mornings on the weekends when I am wide awake at 7am while the husband is snoring away.


The only good thing with our arrangement is that when I get up I bake to occupy my time. He usually wakes up to the smell of something baking on the weekends and he slowly slithers from under the covers to the enticing smell from the kitchen.

A few weeks ago I decided since it was a lovely warm day I would try my first attempt at a fruit tart.

As reached for my favorite baking book "The Joy of Vegan Baking" and found a recipe that I thought I could tackle.


After about 1 1/2 hours, and a whole lot of mess, I finally finished!

I started by making a quick shortbread crust then making a banana custard filling followed by a layer or strawberries. It didn't take too much time and most of that time was chopping strawberries or whisking the custard. ( I was slightly obsessed with the sizes of sliced strawberries..LOL)

I have mentioned this book before and I highly suggest it for those who want to make some tasty desserts. It has a lot of baking tips in it which is helpful for someone ,like myself, who has only been baking for a year.

Needless to say, that husband of mine made his way into the kitchen and was in weekend heaven when he saw this waiting for us.

Perhaps mornings are not so bad after all.....


The Most Amazing Vegan Cheesecake Ever!

When I went vegan from vegetarian the one thing I knew I would miss is cheesecake. I mean you can't make cheesecake without cheese right? WRONG!
The beautiful photo to the left is from the woman who came up with the recipe and she has her own cooking blog. It is a 2 layered pumpkin cheesecake and it is amazing!


I have tried many of her recipes and I urge everyone to give them a try because I have yet to come across one that did not taste absolutely amazing! I could not find the photo of my attempt at this cheesecake but when I find it I will post it.

I have since made alterations to the base recipe and made a husband pleasing lemon cheesecake. It is his absolute favorite but for me I am madly in love with the 2 layered pumpkin cheesecake.

So please try out the recipe from her site and trust me, no one will know it's vegan!

The Pleasure Of Muffins

I have always loved warm muffins. I love the smell of them baking in the morning and my husband has found out how amazing it is to wake up to that smell!

The muffins shown are whole wheat banana and carob muffins with a little bit of maple roasted flaxseed in them for sweetness. My husband has always told me he was not a fan of bananas but that didn't seem to stop him when he woke up to the smell of these little gems baking.


The receipe was based on one in "The Joy of Vegan Baking", a book I HIGHLY recommend for anyone who wants some great baking ideas and tasty recipes.

Eating With Your Eyes


I know it sounds a bit cheesy but it's true. I can tell people how good vegan baking can be but they will not believe me, but if I show them instead they are sold!

So with that in mind, I try to ensure my presentation is as good as the taste. It could be the most amazing cookie/muffin/cake/cupcake/etc but if it looks bad people are less likely to give vegan baking a chance. The truth is, vegan bakers need to go a little bit further to entice people to try their food.


The good thing about this is you have the ability to knock the socks off everyone since they are not expecting to be impressed !
I love seeing the look on people's faces when they see my baking and the"OMG this is AMAZING!" look when they taste it.It gives me a sense of pride and accomplishment when I can get people's additudes to change in regards to vegan food.
I have attached some very eye pleasing vegan treats to hit this point home. ENJOY!

Welcome To Benevolent Baking!


I wanted to start this blog to not only share my vegan baking experiences but to show people that being vegan doesn't mean you can't have AMAZING sweets and tasty treats! In fact anyone who tries my baking never believes it is vegan and always asks for more.


I am going to be posting pictures of my baking, recipes and reviews of baking books for everyone to enjoy:)

So to start things off, here is my most recent baking endeavour! It's a fruit shortbread tart with vegan whipped topping. my husband was so excited when he got home and he found out I had been baking. Needless to say they are all gone and he is a happy man LOL!
