So this weekend I was thinking about these cupcakes I use to get when I was not vegan. They had vanilla coffee frosting and were so amazingly yummy so I thought I would try my hand at making them in a "vegan friendly"way!I my base cupcake was from "Vegan Cupcakes Take Over The World" and then I did some personalizing. The frosting was simple but as I don't own a hand mixer my arms are a bit sore from all the whisking...LOL!
The end result was a moist, flavorful, delicious cupcake! I think I may like this one more than the one I remember from so long ago!
So next time you are craving one of those non vegan goodies, try your hand at making it! You may just surprise yourself!
